Potato – cucumber – salad

Ingredients for 4 servings:

  • 800 g potatoes
  • salt and pepper
  • 2 m.-large onion(s), red
  • 1 garlic
  • 3 tbsp olive oil
  • some vegetable broth
  • 5 tbsp vinegar (red wine vinegar)
  • Sugar
  • 1 cucumber(s)
  • 1 bell pepper(s), red

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the potatoes and boil them in salted water until tender, then let them cool. Slice or dice the onions and sauté them in oil with the chopped garlic. Deglaze with broth and vinegar, remove from the heat, and season with salt, pepper, and sugar. Slice the potatoes and cucumber, dice the bell pepper, and place everything in a bowl. Pour the sauce over the potatoes, mix well, and let it stand for a moment. Season to taste before serving.
