Ingredients for 2 servings:

  • ½ bunch of spring onions
  • 75 g cheese (Appenzeller or Emmental)
  • 5 slices of bacon
  • 250 g potato noodles
  • ½ tbsp oil
  • salt and pepper
  • cress

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Swiss style

Chop the spring onions and coarsely grate the Appenzeller cheese. Cut the bacon into pieces. Heat the oil, fry the bacon until crispy, and remove. Fry the dumplings in the hot bacon fat for about 5 minutes until golden brown. Add half of the spring onions and fry, then season. Mix in the bacon and cheese and heat for 2-3 minutes, melting the cheese. Sprinkle the remaining spring onions over the dumplings and season with pepper. Sprinkle with cress and serve.
