Ingredients for 100 servings:

  • 700 g potato(s), floury
  • 700 g sugar
  • 450 g flour
  • 3 packets of baking powder
  • 6 eggs
  • 100 g chocolate
  • 50 g candied orange peel
  • 50 g candied lemon peel
  • 2 tsp cinnamon
  • 2 tsp clove(s), ground
  • 500 g ground almonds
  • Wafers, with 7/5/4 cm diameter
  • Cake icing, chocolate for decoration

Instructions

Working time approx. 1 hour; Total time approx. 1 hour

Boil the potatoes in unsalted water, peel while still hot, mash them, and let cool. Mix the flour with the baking powder and add to the cold potatoes along with the sugar. Add the eggs and mix well. Finely chop the chocolate, candied lemon peel, and candied orange peel, add to the mixture along with the remaining spices and the almonds, and knead well. Place 1 heaped teaspoon of batter onto each 7 cm wafer, smoothing it out as needed for smaller wafers. Place on a baking sheet lined with baking paper and bake at 200 degrees Celsius for about 20 minutes. Once cooled, decorate with the chocolate glaze.
