Potato Mango Soup

Ingredients for 4 servings:

  • 1 m.-sized onion(s)
  • 1 kg potatoes
  • 1 m.-sized mango(s)
  • 450 ml vegetable stock
  • 150 ml white wine
  • 75 ml cream
  • some oil
  • salt and pepper
  • nutmeg

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Own creation

Peel and dice the onion, then sauté in a little oil in a pan. Peel and dice the potatoes, and add them. Pour in the broth and bring to a boil. After about 10 minutes, add the peeled and diced mango and simmer until the potatoes are tender. Then purée the soup, stir in the white wine and cream, and simmer gently for a few more minutes. Season to taste and serve.
