Ingredients for 4 servings:
- 1 kg potato(s), floury
- 250 g flour
- some salt
- nutmeg
- 2 eggs
- e.g. fat for frying

Working time approx. 30 minutes; Total time approx. 30 minutes
Austrian potato noodles
Boil the potatoes in their skins and peel them while still hot. Then press them through a ricer or mash them until lump-free. Add the remaining ingredients and knead into a smooth dough. Roll the dough into thumb-thick sausages and cut into approximately 3 cm long pieces. Fry them in floating fat (in a deep fryer) until light brown. Sprinkle with a little salt. They can be eaten with sauerkraut or instead of croquettes with meat. Or you can simply serve them with milk.
