Potato noodles with meatballs

Ingredients for 3 servings:

  • 400 g minced meat of your choice
  • 1 m.-sized egg(s)
  • 1 tbsp breadcrumbs
  • 1 tsp mustard, medium hot
  • salt and pepper
  • Paprika powder
  • 3 bell peppers, red, yellow, green
  • 250 g cherry tomatoes
  • 500 g potato noodles from the refrigerated counter
  • 1 tbsp margarine
  • 200 ml tomato juice
  • 2 tbsp marjoram, chopped
  • 2 tbsp lovage, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 35 minutes

Knead the minced meat with egg, breadcrumbs, mustard, salt, pepper, and paprika, and form into small balls. Clean and halve the bell peppers, then cut into approximately 2 cm cubes. Clean and halve the cherry tomatoes. Fry the potato noodles in hot margarine for 3-4 minutes until golden brown, then remove. Add the meatballs to the frying fat and fry. Add the bell peppers, tomatoes, and tomato juice, and cook for 5-10 minutes. Return the potato noodles to the pan, heat briefly, and season with salt, pepper, marjoram, and lovage.
