Potato Noodles with Vegetables and Sausages
The perfect potato noodles with vegetables and sausages recipe with a picture and simple step-by-step instructions.
- 1 Pc. Clove of garlic
- 2 Pc. Red onions
- 3 tbsp Olive oil
- 1 Pc. Red pepper
- 1 Pc. Yellow pepper
- 1 Pc. Small zucchini
- 1 Can Chunky tomatoes, approx. 400 g
- 3 Pc. Wiener sausages
- Salt pepper
- 1 tbsp Agave syrup
- 1 tsp Dried oregano
- 0,5 tsp Dried tarragon
- 1 Pc. Organic lemon
- 200 g Sheep cheese
- 800 g Potato noodles from the refrigerated shelf
- Butter
- 50 g Sunflower seeds
- Finely chop the garlic and onions. Heat olive oil in a saucepan and sweat both in it. Cut the bell pepper into strips, halve the zucchini and cut into small slices. Put both in the pot and fry briefly.
- In the next step, add the chopped tomatoes, bring to the boil briefly and then simmer over a medium heat for a total of about 20 minutes (with the lid closed). Cut the sausages into slices and add them. Season to taste with salt, pepper, agave syrup, oregano and tarragon.
- Crumble the feta. Rub some of the zest from the lemon. Briefly toast the sunflower seeds without fat in a pan. Fry the potato noodles in the melted butter in a large pan until crispy. Serve the potato noodles with the vegetables. Sprinkle with feta, sunflower seeds and lemon zest.
