Ingredients for 4 servings:

  • 1 kg potatoes
  • 2 tbsp oil (olive oil)
  • 3 bell peppers, red, yellow, green
  • 2 cloves garlic
  • 1 onion(s) (vegetable onion)
  • Salt
  • Pepper, freshly ground
  • Spice mix for the gyros
  • 4 sprigs of thyme
  • 50 g black olives
  • 200 g sheep’s cheese
  • Chili pepper(s) for garnishing

Instructions

Working time approx. 45 minutes; Total time approx. 45 minutes

Wash and quarter the potatoes. Heat oil in a pan and fry the potatoes for 15 minutes, turning frequently. Clean the bell peppers and cut them lengthwise into fine strips. Peel and finely chop the garlic. Peel the onion and cut them into fine strips. Add the onion, bell peppers, and garlic to the potatoes 10 minutes before the end of the cooking time. Season with salt, pepper, and gyro seasoning. Meanwhile, wash the thyme, shake dry, and pluck the leaves from the stems. Add the thyme and olives to the potatoes about 3 minutes before the end of the cooking time. Roughly crumble the feta cheese, sprinkle over the potatoes, and serve. Chop the chili pepper and sprinkle over the potatoes.
