Ingredients for 4 servings:

  • 1 ½ kg potatoes
  • 3 onions
  • 2 cans of tomatoes
  • 200 g cheese (Emmental), grated
  • Salt and pepper, coarse
  • Vegetable broth, granulated
  • chives

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Quick and cheap lunch

Peel the potatoes and cut into even-thick slices. Halve the onion and slice into strips. Briefly fry both in olive oil. Chop the tomatoes and pour their juice over the potatoes, season with salt and coarse pepper, and mix briefly. If there is too little tomato juice and the potatoes risk burning, add a little more water and stock. Cover the pan and simmer until the potatoes are tender. Season to taste, then sprinkle the cheese over the top and let it melt. To serve, sprinkle a little coarse pepper over the cheese and garnish with chives, if desired. Serve with a green salad.
