Potato pancakes from the waffle iron

Ingredients for 2 servings:

  • 4 apples
  • 1 cinnamon stick(s)
  • 2 tbsp sugar
  • 250 ml apple juice
  • 800 g potatoes
  • 1 onion(s)
  • 3 eggs
  • 3 tbsp flour
  • 3 tbsp oat flakes, wholegrain
  • Salt
  • some oil

Instructions

Working time approx. 35 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour 5 minutes

Peel and quarter the apples. Core and dice them, then simmer with the cinnamon stick and sugar in the apple juice for about 10-15 minutes. Peel the potatoes and peel the onion. Finely grate both in a food processor. Stir in the eggs, flour, and oats and season with salt. Heat a waffle iron, brush with a little oil, and bake about 6-8 waffles one after the other for 10-12 minutes each. Serve with the apple compote. Serve with cinnamon and sugar.
