Ingredients for 2 servings:
- Mashed potatoes, leftovers, enough for 2 people
- 1 egg yolk
- 2 tbsp, leveled potato starch
- Oil for frying, neutral
- herbs, chopped
- Cheese, grated
- Breadcrumbs
Instructions
Working time approx. 5 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 15 minutes
Using up leftover mashed potatoes
Mix the mashed potatoes with one egg yolk and the potato flour. If you like, you can also add chopped herbs or grated cheese. Form into small cookies and fry in a pan with a little oil until golden brown on both sides. For a crispier finish, roll the cookies in some breadcrumbs before frying.
