Potato pancakes, optionally also as a dessert

Ingredients for 4 servings:

  • 5 large potatoes
  • 2 eggs
  • 1 onion(s), only for savory potato pancakes
  • 1 tbsp flour
  • salt and pepper
  • Lard or oil for frying

Traditional Polish cuisine

Peel the potatoes, wash them under running water, grate them finely, and squeeze the excess water. Peel and grate the onion. In a large bowl, whisk the eggs, add the grated potatoes, onion, flour, salt, and pepper, and mix well. Sprinkle a little salt into a heated pan. When they start to crackle, remove them from the pan and add the fat. Add 1 tablespoon of potato batter to each pan and form round fritters about 10 cm in diameter. Fry until golden brown on both sides. The fritters should be thin and crispy. Serve hot straight from the pan. Serve with sour cream. For those with a sweet tooth: You can also serve the fritters with sugar or blueberries, but in this case, the potato batter will not contain any onions!
