Potato Pancakes, Rhenish Style

The perfect potato pancakes, rhenish style recipe with a picture and simple step-by-step instructions.

  • 2 Kg Waxy potatoes
  • 3 Red / white onion
  • 2 Eggs
  • 1,5 tbsp Quark
  • 250 ml Oil
  • 1 tbsp Flour
  • 2 Praising Salt and pepper
  1. Peel the potatoes and the onion and grate them coarsely on the grater. Put the mixture in a bowl and stir in the quark.
  2. Separate the egg white from the yolk. Add salt, pepper, flour and egg yolk and stir in. Beat the egg whites with the mixer until foamy and stiff and fold in the mixture. Lightly cross-bake two tablespoons each in the preheated pan with plenty of oil.
