Potato patties

Ingredients for 3 servings:

  • 1 kg jacket potatoes
  • 400 g carrot(s), organic
  • 30 g ginger
  • 120 g leek, the green
  • Nutmeg, grated
  • 2 tsp herbal salt
  • Flour (buckwheat) as breading
  • olive oil

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

gluten-free + egg-free + dairy-free

Peel the boiling potatoes while still hot and press them through a ricer. Finely grate the carrots and ginger. Slice the leek greens into rings, then finely chop. Grate in plenty of nutmeg and herb salt, and mix everything well. Form into palm-sized, approximately 1 cm thick patties, carefully coat in flour, and fry in hot oil on medium heat. Be careful when placing and removing them; I used two spatulas. My own recipe.
