  • some butter, liquid for spreading

Boil the potatoes with their skins on, peel them while hot, and press them through a potato ricer. Season with salt, pepper, and nutmeg. Stir in the egg, egg yolk, flour, and butter, and let the dough cool. For the filling, peel the onions and dice the smoked meat, then fry them in the pan and cook the onions until translucent. Mix in a bowl with the egg and parsley. Roll out the potato dough and spread with the filling. Roll it up like a roulade. Brush with the egg yolk, sprinkle with breadcrumbs, and brush frequently with melted butter. Bake at 200°C for 15-20 minutes. Serve the roulade sliced ​​as a side dish.
