Ingredients for 4 servings:

  • 1 kg potato(s), (waxy)
  • 1 onion(s), sliced
  • ⅛ liter vegetable broth
  • 1 tbsp vinegar
  • 1 tbsp mixed herbs
  • 1 gherkin(s), diced
  • 2 tomatoes, diced
  • 1 cup sour cream
  • salt and pepper

Instructions

Working time approx. 20 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 20 minutes

Boil the potatoes in their skins in salted water for about 20 minutes, let them cool slightly, peel, and slice. Pour the hot vegetable stock over them and let them simmer for a while, then add the remaining ingredients and fold them in. Season with salt and pepper. If you don’t like the sour cream, you can substitute it with 6 tablespoons of good-quality oil.
