Potato salad with apple and egg

Ingredients for 4 servings:

  • 1.2 kg jacket potatoes
  • 500 g mayonnaise (large jar)
  • 2 cups of natural yogurt
  • 6 eggs, hard boiled
  • 1 apple
  • 6 gherkins (cornichons)
  • 1 onion(s)
  • salt and pepper
  • Sugar

Working time approx. 30 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 30 minutes

Peel the boiled potatoes. Mix the mayonnaise with the natural yogurt, salt, and pepper. If the mayonnaise is too acidic, add a little sugar. Peel and chop the eggs, apple, and onion. Chop the gherkins and add everything to the mayonnaise, stirring. Chop the potatoes, add them, and stir again. Done! Cut the potatoes into cubes or slices as desired. If you don’t have natural yogurt, you can use one tub of sour cream instead of two yogurts.
