Potato salad with Bremen boiled meat

Ingredients for 4 servings:

  • 1 kg jacket potatoes, peeled, sliced
  • 500 g meat sausage (Bremen boiled sausage)
  • 1 cucumber(s)
  • 2 m.-large carrot(s)
  • 2 bunches of dill
  • 200 ml champagne vinegar
  • 400 ml water
  • salt and pepper
  • 1 tbsp mustard
  • Sugar
  • 5 cl oil

Instructions

Working time approx. 45 minutes; Rest time approx. 1 hour; Total time approx. 1 hour 45 minutes

Boil the waxy potatoes, peel them, and slice them. Peel the skin from the “Bremer Gekochten” (a fine, lightly smoked sausage) and slice it as well. Peel the cucumber and carrots and then slice them very thinly. Wash the dill and chop them coarsely. Place all ingredients in a large bowl and mix gently. For the marinade, combine the champagne vinegar with water, salt, pepper, mustard, and sugar. Slowly add the oil, whisking until smooth. Pour the marinade over the salad and let it marinate for an hour.
