- 6 potatoes
- 400 g bacon (lean smoked bacon)
- 1 onion(s), chopped
- Vinegar, to taste
- 1 lettuce (endive or lettuce)

Eifel farmer’s salad
Boil the potatoes. Meanwhile, dice and fry 400g of lean smoked bacon. Sauté 1 chopped onion in the bacon fat until translucent, season with vinegar. Trim the endive or lettuce and mix it in a large bowl with the potatoes, bacon sauce, onion rings, and chopped herbs.
