Potato salad with coleslaw and oranges + pears

Ingredients for 4 servings:

  • 1 kg potato(s), waxy
  • 300 g salad (coleslaw, ready-made product)
  • 1 onion(s), red
  • 2 bulb(s)
  • 250 ml Miracle Whip
  • 2 oranges

THE DAY BEFORE: Boil the potatoes for about 20 minutes (until firm to the touch) and then rinse briefly. Once they have cooled slightly, peel the potatoes and, once completely cooled, store in the refrigerator until the next day. On the day of preparation: Drain the coleslaw. Finely dice the onion. Peel and core the pears. Quarter them and cut into small slices. Peel the oranges and fillet them with a sharp knife – that is, cut out the individual pieces WITHOUT the skin. Then halve these again to a bite-sized size. In a bowl, mix the bite-sized potato slices with the Miracle Whip. Mix in the onion and pears and chill. Just before serving, mix in the coleslaw. Serve the potato salad on 4 plates and garnish with the orange segments. For a little crunch, you can sprinkle chopped pistachios or chopped walnuts on top.
