Ingredients for 4 servings:
- 600 g potatoes
- 2 carrots
- 100 g pickled cucumber(s)
- 150 g sauerkraut
- 150 g mayonnaise or sour cream
- salt and pepper
- Lettuce leaves
- chives
Instructions
Working time approx. 20 minutes; Total time approx. 20 minutes
Thinly slice the boiled, cooled, and peeled potatoes, the cooked carrots, and the pickled cucumbers. Roughly chop the sauerkraut. Reserve half of the carrots for garnishing. Mix the salad ingredients with mayonnaise or sour cream and seasonings. Garnish the potato salad with lettuce leaves and carrot slices and sprinkle with chives.
