Potato salad with the steamer

Ingredients for 6 servings:

  • 1 kg potatoes
  • 2 onions
  • 100 ml vinegar (white wine)
  • 60 ml olive oil
  • 1 some mustard
  • 1 some sugar
  • 1 bunch of parsley
  • 1 pinch of salt
  • 1 pinch(s) of pepper

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Peel the onion, halve it, and slice it into thin rings. Place the onion in a perforated steamer container and spread it out evenly. Peel the potatoes, cut them into the desired thickness, and place them over the onion. Place them in the steamer for about 45 minutes, until they are just tender. In the meantime, prepare the marinade. Mix all ingredients (vinegar, oil, mustard, sugar, salt, and pepper). When the potatoes are done, let them cool for about 10 minutes. Place the potatoes and onion in a bowl, fold in the marinade, and stir well. Season to taste with salt and pepper, add vinegar or oil if desired, and stir in the parsley. Enjoy while still warm.
