Potato – salami – carrot – soup

Ingredients for 4 servings:

  • 4 large potatoes, diced
  • 6 carrots, diced
  • 4 onions, diced
  • 200 g salami, diced
  • 4 eggs
  • 4 tbsp broth, granulated
  • 1 tsp caraway seeds
  • Lovage, shredded
  • cornstarch
  • 1 tbsp oil
  • 4 liters of water

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Bring water to a boil, stir in the granulated broth. Add the potatoes and carrots. Fry the onions in the oil, briefly tossing in the salami. Add to the boiling soup and continue simmering over medium heat. Add the lovage and caraway seeds. When the potatoes and carrots are tender, drop in the eggs. Mix a little cornstarch with cold water until smooth, add to the soup, and let it bubble again briefly.
