Danziger Sud
Cook the potatoes and two onions with the bay leaf and peppercorns. Cut the pork belly into pieces and brown them vigorously, while adding two onions (also in pieces) to the pan. Puree the cooked potatoes and onions and return them to the cooking water. Stir in the browned meat and onions. Deglaze the pan juices with stock and add it to the soup. Season to taste with salt, pepper, and vinegar. A traditional dish from our father’s side, hearty and filling.
