Potato Soup …

The perfect potato soup … recipe with a picture and simple step-by-step instructions.

  • 1000 g Potatoes
  • 1 packet Soup vegetables
  • 3 tablespoon Oil
  • 200 g Streaky bacon
  • 1 size Onion
  • 600 ml Chicken broth from frozen storage
  • 2 Branches Lovage chopped
  • 1 bunch Chopped parsley
  • 1 bunch Salt and pepper
  • 1 bunch Hot dog
  1. Wash, peel and cut the potatoes and soup vegetables into cubes suitable for soup. Likewise the bacon and the onion. Finely chop the lovage and chop the parsley.
  2. Heat the oil in a large saucepan and fry the diced bacon in it. When it starts to take on color, add the onion and let it translate. Now add the soup vegetables and sauté briefly; Fold in the potatoes and lovage and fill up with the chicken stock until everything is just covered with liquid. Pour in a little more water if necessary.
  3. Let the soup simmer over a mild heat for about 20 minutes, then season again and serve sprinkled with freshly chopped parsley. I heated another beef sausage in it because my husband loves it so much.
