Ingredients for 4 servings:
- 1 kg potatoes
- 2 bunch soup vegetables
- 1 ½ liters vegetable broth
- 4 tbsp oil
- 300 g processed cheese with ham
- salt and pepper
- nutmeg
- some parsley
- 3 egg yolks
- 2 onions
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour 5 minutes
Dice the potatoes and vegetables. Chop the onion. Sauté the onion in oil, add the vegetables. Pour in the broth and simmer for about 30 minutes. Remove some of the vegetables and puree the rest. Add the cream cheese and the reserved vegetables and bring to a boil briefly. Season with salt, pepper, and nutmeg. Remove from the heat and beat in the egg yolks. Serve sprinkled with chopped parsley. Tip: If you like, you can also add sliced sausages or diced smoked ham to the soup.
