Ingredients for 4 servings:
- 1 kg potatoes, floury
- 1 liter chicken broth
- 1 bunch of soup vegetables
- 1 onion(s)
- 1 piece(s) butter
- 2 spring onions
- 250 g smoked salmon
- 1 cup of cream
- 1 cup sour cream
- 1 lemon(s), untreated
- 1 jar white wine, dry
- Salt
- pepper
- nutmeg
- Sugar

Working time approx. 25 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 1 hour
Delicious and filling
Chop the onions, peel and dice the potatoes, and chop the vegetables. Melt the butter in a large saucepan and fry the onions. Add the sugar and let it caramelize. Add the vegetables and fry briefly. Deglaze with the white wine. Allow the white wine to reduce. Pour in about 3/4 of the stock. Add the potatoes and simmer for 15-20 minutes. In the meantime, season the sour cream with a little salt, nutmeg, pepper, and a little lemon zest and mix. Cut the smoked salmon into strips and the spring onions into strips. Purée the soup with a hand blender. Then add the cream and top up the soup with the remaining stock until it reaches a nice consistency. Season to taste with salt, pepper, and nutmeg. Add the spring onions to the soup. Pour the seasoned sour cream into a soup plate, arrange the smoked salmon strips on top, and add the soup.
