Pumpkin baked with ham and feta

Ingredients for 2 servings:

  • 600 g pumpkin flesh, prepared and weighed
  • 1 tbsp oil
  • 1 tbsp water
  • 1 clove(s) garlic, squeezed
  • 1 pinch of chili flakes or Pul Biber
  • some lemon pepper
  • 1 tsp thyme, fresh, leaves
  • 1 pinch of salt
  • 1 m.-large onion(s), red
  • 100 g diced ham or bacon
  • 1 tsp brown sugar or 1 tbsp maple syrup
  • 100 g feta cheese
  • e.g. balsamic vinegar

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 50 minutes

Peel and deseed the pumpkin, and cut into 2-3 cm cubes. Place in a baking dish with oil, water, crushed garlic clove, herbs, and spices; mix well. Microwave for about 4 minutes at 800 watts. In the meantime, preheat the oven to 200°C (top/bottom heat). Cut the onion into thin wedges. After 4 minutes, mix well with the pumpkin wedges and continue cooking in the microwave for 4 minutes. The cooking time depends on the type of pumpkin used and the size of the pieces, so check the cooking time when stirring for the first time and adjust the cooking time if necessary. The pumpkin pieces should still have some bite at the end of the microwave cooking time. Mix in sugar or maple syrup, scatter ham cubes or bacon strips over the vegetables. Bake in the preheated oven for about 10 minutes. Stir, sprinkle with crumbled feta, and bake for another 10 minutes. If you like, you can drizzle some balsamic or fruit puree vinegar, such as fig and date vinegar, over the dish before serving.
