Ingredients for 4 servings:

  • 800 g potatoes
  • 250 g flour
  • Salt
  • Clarified butter
  • possibly apples

Tyrolean potato swirler

Boil the potatoes, peel them, press them through a ricer, season with salt, and lightly mix in the flour. Quickly add them to hot clarified butter and fry them like a pancake. The pancakes should not look lumpy. If you like, you can also add peeled apple pieces to the pan and briefly fry them with a swirl. This will make the dish a little juicier. Serve with apple compote or buttermilk.
