Potato – tomato – minced meat casserole

Ingredients for 4 servings:

  • 4 large potatoes, cooked
  • 4 large tomatoes
  • 500 g minced meat, mixed
  • 2 small garlic cloves, chopped
  • 1 small onion(s), chopped
  • 1 can of tomatoes, chopped
  • 1 tsp oregano, dried
  • 1 tsp basil, dried
  • salt and pepper
  • 150 g cheese, grated
  • 2 spring onions, cut into rings

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Brown the minced meat in a little oil and add the onions. Add the garlic and spices to the minced meat. Fry everything until crumbly. Add the can of chopped tomatoes. If there is too little liquid in the pan, add a little tomato paste and mix with a little water until smooth. Cut the cooked potatoes and tomatoes into not-too-thin slices and line the bottom of a baking dish with a few slices of potato. Top with a layer of minced meat. Then a layer of potatoes and then a layer of tomato slices on top of the potatoes. Now add more minced meat. Continue in this way until the last layer of potatoes and tomatoes alternates in a circle on the casserole. Distribute the spring onions over the casserole. Sprinkle with grated cheese. Bake in a preheated oven at 180-200 degrees Celsius for 20-30 minutes until golden brown.
