Boil the potato until it’s cold. Peel it and use an apple corer to make a hole lengthwise in the center. Set aside the cut-out potato for later use. Fry the sausage in a pan in hot oil until cooked through and browned. Remove from the pan and let cool slightly on kitchen paper. Then insert the sausage into the resulting hole. In a small bowl, break the egg, season generously with cayenne pepper, and whisk. In another bowl, season the breadcrumbs with salt, pepper, and nutmeg and mix well. First coat the sausage-shaped potato in the egg, then roll it in the breadcrumbs. Repeat this process at least twice, possibly three times, depending on how well it sticks. Bread the cut-out potato roll in the same way. Fry the breaded potato and the “roll” in the pan in hot oil on all sides. Then slice, arrange on a platter, garnish, and serve. Sauce lovers can create their own sauce – a tomato salad was enough for me. 370 kcal per serving
