Potatoes with balsamic vinegar

Ingredients for 4 servings:

  • 1 kg potatoes, small (triplets)
  • 1 handful of basil
  • 4 tbsp olive oil
  • 5 tbsp balsamic vinegar
  • 1 tsp honey
  • 2 tbsp oil
  • salt and pepper
  • e.g. Parmesan

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

delicious side dish to grilled food

Boil the potatoes with their skins on, then peel and let cool. In a saucepan, simmer the balsamic vinegar and honey for a few minutes. Roughly chop the basil leaves. Heat the oil in a pan and fry the potatoes over high heat until golden brown. Season with salt. Pour in the balsamic vinegar mixture and toss the potatoes. Before serving, mix in the olive oil and basil. Sprinkle with Parmesan cheese, if desired.
