Power beetroot salad

Ingredients for 2 servings:

  • 1 beetroot
  • 1 carrot(s)
  • 1 shallot(s), finely chopped
  • 1 tsp ginger, fresh and grated
  • 1 garlic clove(s), finely chopped
  • 1 tbsp sesame seeds
  • 1 tbsp hemp seeds
  • Balsamic vinegar, dark or light
  • olive oil
  • Oil (hemp oil)
  • 1 lemon(s), juice

Raw vegetable salad

Peel the beetroot and carrot, grate them with a grater, and place them in a large bowl. Add the chopped shallot and garlic, grated ginger, sesame seeds, and hemp seeds to the salad mix. For the dressing, simply add balsamic vinegar, olive oil, hemp oil, and a little juice from a freshly squeezed lemon to taste. The salad is very versatile; you can adjust the quantities as you wish, adding or omitting ingredients. You can spice it up a bit with sesame oil or grated apple, for example. A tip: Instead of lemon juice, or in addition to it, you can use grated lemon zest; it contains 10 times more vitamin C than the juice. The zest grates easily from frozen. Use only organic lemons, and wash them thoroughly with a mixture of baking soda and water. The perfect salad for winter—or, in my opinion, all year round.
