Prawn cocktail with ginger

Ingredients for 4 servings:

  • 2 egg yolks
  • 1 tsp sugar, brown, if available
  • 2 tsp mustard
  • 125 ml sunflower oil
  • 1 tbsp vinegar, pomegranate
  • 3 drops Tabasco, (BBQ Tabasco sauce)
  • 1 pinch of salt
  • Pepper, from the mill
  • 100 g crabs (North Sea crabs)
  • 1 clove(s) garlic
  • 1 cm ginger, fresh

Instructions

Working time approx. 15 minutes; Total time approx. 15 minutes

Finely chop or press the garlic and ginger. Mix together the egg yolk, mustard, sugar, and vinegar. Don’t forget the pinch of salt. Slowly blend in the oil with a hand blender until a mayonnaise forms. Blend the garlic and ginger into the mayonnaise. Mix the prawns into the mayo and season with Tabasco, salt, and freshly ground pepper. The whole thing can now be served as desired. Or you can serve it with bread.
