Prawns with onion

Ingredients for 4 servings:

  • 1 kg prawns, frozen, with head and shell
  • 3 cloves garlic
  • Sherry or dry white wine
  • 1 tbsp parsley, chopped
  • 1 chili pepper(s), dried, or chili flakes
  • olive oil
  • Salt

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 40 minutes

Shrimp in garlic sauce

Thaw the prawns in cold water, then peel them, remove the heads and intestines. To do this, cut a slit along the back of the prawns and simply pull out the intestines. Peel the garlic and finely chop or press it. Heat the olive oil in a pan, or better yet, in a clay pot. Add the prawns to the hot oil. When they turn pinkish-orange, add the garlic, season with salt, and mix well. Add the crushed chili pepper or chili flakes and continue frying. Finally, deglaze with a splash of sherry or white wine and let the alcohol evaporate. Remove the pan or clay pot from the heat and sprinkle with finely chopped parsley. I recommend buying plenty of bread, preferably baguette, because the sauce is simply delicious.
