Pre-Christmas salmon trout in salt crust

Ingredients for 4 servings:

  • 1 trout(s) (salmon)
  • 2 ½ kg salt
  • 100 g gingerbread spice
  • 30 g clove powder
  • 1 egg white
  • 150 ml water

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 1 hour; Total time approx. 1 hour 15 minutes

Place a sheet of baking paper in a bowl of water. Wash and gut the fish thoroughly, but do not fillet it; leave it whole and the skin on. Mix the remaining ingredients together and coat the fish tightly. Then, wrap the salt-crusted fish in baking paper (tying the ends) and cook in the oven at 200°C (400°F) for 45-60 minutes. You can also add a tablespoon of fruit jelly or mustard to the inside of the fish beforehand. Remove the fish from the oven after cooking, remove the central bone, and serve. Rice with lobster or crab sauce is delicious.
