Ingredients for 4 servings:

  • 2 packs of feta cheese
  • some olive oil and oil from the dried tomatoes
  • 2 tomatoes, dried in oil
  • 1 handful of walnuts
  • 1 tbsp pine nuts
  • 1 garlic clove(s)
  • some chili or pickled pepper
  • 2 figs, dried
  • 1 tbsp breadcrumbs
  • Thyme
  • Paprika powder, sweet
  • pepper, black
  • Olives, optional
  • some honey

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

Crispy soft feta, spicy baked with fruity figs, Hellenic inspired

Place the feta in a baking dish and drizzle with a little oil (to taste). Dice the sun-dried tomatoes and figs and scatter them on top of the feta along with the pine nuts and crushed garlic clove. Roughly crush the walnuts in a mortar and pestle and sprinkle them on top. Season with chili or finely chop the pickled peppers and add them. Sprinkle with breadcrumbs and add Mediterranean seasoning, if desired. Bake in the oven at approximately 160°C until the feta is lightly browned. Drizzle with a little honey and serve. Serve with fresh figs and grapes, or with a Greek farmer’s salad without feta.
