Protein biscuits with cottage cheese

Ingredients for 1 servings:

  • 200 g cottage cheese
  • 130 g oat flakes, fine
  • 3 m.-sized eggs
  • 1 spring onion(s)
  • possibly mushrooms
  • possibly cheese, grated
  • salt and pepper
  • Paprika powder, sweet
  • some oil for the tray

Instructions

Working time approx. 10 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 30 minutes

Mix the cottage cheese, eggs, and oats thoroughly and season with salt, pepper, and paprika to taste. Let the mixture rest for one hour. In the meantime, finely chop the spring onions and mushrooms, if desired, and finely grate the cheese. Preheat the oven to 200°C (top/bottom heat), line a baking sheet with baking paper, and lightly oil it. Mix the prepared ingredients into the cottage cheese mixture and season again to taste. Form approximately 10-12 discs and place them on the baking sheet. Bake for 20 minutes until golden brown, turning once after 10 minutes if necessary. The protein discs taste great with hummus or avocado cream and can be used as a bread substitute. Smaller discs also make great finger food for parties and can be topped and decorated as desired.
