Ingredients for 2 servings:
- 500 g Skyr, preferably with flavor
- 350 ml skimmed milk, 1.5%
- 20 ml syrup, light, e.g. Monin
- 15 g inulin
- 15 g flavor powder, e.g. Smacktastic or similar.
Instructions
Working time approx. 10 minutes; Rest time approx. 2 days 12 hours; Total time approx. 2 days 12 hours 10 minutes
Mix all ingredients thoroughly with a whisk in a bowl. Depending on your ice cream maker, transfer to the ice cream maker bowl now or later and refrigerate for at least 60 minutes. If you like, you can top with nuts, chopped chocolate, or crushed cookies shortly before or after the mixture goes into the ice cream maker. Prepare the ice cream mixture according to the appliance instructions. Note: Very different types of skyr, syrup, and Smacktastic can be used to make very different types of ice cream. In my ice cream maker, the two really large portions are ready after 36 minutes. The one pictured shows vanilla skyr, hazelnut syrup, Smacktastic Salted Peanuts, and a topping of brittle and grated dark chocolate. Another very tasty variation of spaghetti ice cream: vanilla skyr, vanilla syrup, and Smacktastic spaghetti ice cream. Topped with homemade strawberry sauce and grated white chocolate. Per portion approx. 440 g: 33.6 g E, 21.8 KH = 270 Kcal.
