Provençal whiting fillets

Ingredients for 2 servings:

  • 500 g potatoes
  • 8 fish fillets (whiting fillets, quantity according to size)
  • 5 tomatoes, pitted and sliced
  • 1 onion(s), finely chopped
  • 2 cloves garlic, finely chopped
  • 4 tbsp breadcrumbs (wake flour)
  • 4 tbsp parsley, chopped
  • olive oil
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Fish dish from the oven

Boil the potatoes in their skins, peel them, and slice them thickly. Mix the onion, garlic, parsley, and 3 tablespoons of the breadcrumbs. Preheat oven to 210 degrees Celsius (425 degrees Fahrenheit). Cover a baking dish with olive oil, add the potato slices, and season with salt. Arrange the fish fillets on top. Cover with the parsley mixture. Arrange the tomato slices around the fish fillets. Sprinkle with the remaining breadcrumbs, season with a little pepper and salt, and drizzle with olive oil. Bake in the oven for about 25 minutes.
