Carnival pastries – recipe from my grandmother
Whisk the sugar, vanilla sugar, and eggs until fluffy. Combine the salt and baking powder with the flour and slowly stir into the egg mixture. Knead until dry. Roll out the dough very thinly and cut into diamond shapes approximately 5-10 cm long. Heat the oil in a small saucepan. Fry the diamond shapes one at a time in the hot oil until golden brown on both sides. Remove from the pan and let them drain and cool on a wire rack lined with kitchen paper. Place the pastries in a large bowl and sprinkle with powdered sugar. Nautzen are best eaten fresh, while still slightly warm, and not just during Carnival.
