Puff Pastry Dream – Pear Helene

Ingredients for 4 servings:

  • 1 pack of puff pastry
  • 2 bulb(s)
  • 250 ml white wine or Prosecco or water
  • 1 pinch(s) cinnamon powder
  • 2 packets of vanilla sugar
  • 4 dashes lime juice
  • 1 egg yolk
  • 4 tbsp sugar
  • 25 g chocolate glaze or dark chocolate or couverture
  • n. B. sugar, brown
  • e.g. powdered sugar

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 55 minutes

Peel the pears, halve them, remove the cores, and then score them fan-shaped. Caramelize the 4 tablespoons of sugar with 4 tablespoons of wine in a pan and add the pears. Sauté gently and ladle over the wine syrup, then add the remaining wine and simmer the pears for 12-15 minutes until soft. Add the lime juice, cinnamon, and vanilla sugar, basting the pears with the liquid frequently. Roll out the puff pastry and cut into four pieces. Place a pear half on each piece and roll up the edges to form a rim. Shape the whole thing like a pear. Sprinkle the pear with brown sugar. Brush the edges with egg yolk and bake the tarts for about 25 minutes at 180-200°C. Thicken the remaining caramelized, cooled pear juice with powdered sugar and drizzle over the edges and the pear half. Then heat the chocolate glaze and drizzle it over the pears. Let everything cool slightly, but serve warm. If desired, you can add whipped cream.
