Ingredients for 1 servings:

  • 250 g flour
  • 2 tsp dry yeast
  • 1 tbsp sugar
  • 2 pinches of salt
  • e.g. oil for frying

Instructions

Working time approx. 10 minutes; Rest time approx. 45 minutes; Cooking/baking time approx. 5 minutes; Total time approx. 1 hour

Beignets from Nigeria, sweet or savory

Mix all ingredients with lukewarm water as needed to form a batter. The batter should be quite runny, like for crêpes or pancakes. Cover the batter and let it rise for at least 45 minutes. It should increase in volume significantly, otherwise the balls will not be fluffy. Heat the oil and reduce the heat to low, otherwise they will burn. Using two spoons, drop small balls into the hot oil and fry for about 5 minutes until golden brown. Line a plate with kitchen paper and place the balls on top to absorb the oil. If you want the balls sweeter, add more sugar to the batter. You can sprinkle them with powdered sugar, cinnamon, and sugar.
