Pull-apart cake with cherries from the loaf pan

Spread the love

Ingredients for 1 servings:

  • 150 g flour
  • 20 g cocoa powder
  • 130 g sugar
  • 1 pinch of salt
  • 3 eggs
  • 75 g butter
  • 1 jar sour cherries
  • 300 g low-fat curd cheese
  • 200 g sour cream
  • 1 packet of vanilla sugar
  • 2 tsp cornstarch

Instructions

Working time approx. 30 minutes; Rest time approx. 30 minutes; Cooking/baking time approx. 1 hour; Total time approx. 2 hours

Knead the flour, cocoa powder, 50g sugar, salt, 1 egg, and the butter into a shortcrust pastry. Wrap the dough in foil and chill for 30 minutes. Set aside a small amount (about 1/4, but preferably less) of the dough. Roll out the remaining dough into a rectangle and place it in a greased and lined loaf pan, pressing the edges firmly into place. Chill the pan. Drain the cherries. Mix the quark, sour cream, vanilla sugar, 80g sugar, cornstarch, and 2 eggs. Add the cherries to the pan and spread the quark mixture on top. Now “tear” pieces from the remaining dough and spread them on the quark mixture. Bake in a preheated oven on the lowest rack at 175°C (electric oven)/150°C (fan oven) for 50-60 minutes. Let cool in the pan.
