Ingredients for 4 servings:

  • 500 g flour
  • 30 g yeast
  • 250 ml milk
  • 60 g butter
  • 60 g sugar
  • 2 eggs
  • Lemon(s) peel, grated
  • Fat for frying

Instructions

Make a starter dough from flour and yeast, let it rise a little, add lukewarm milk and the remaining ingredients and knead it into a smooth dough, let it rise a little, roll it out on a baking board (0.5 – 1 cm thick), use a glass to cut out circles about 8 cm in diameter and let it rise well. Roll out the cakes thinly in the middle, leaving no holes. There should be a 2 cm wide edge on the outside. Place them in hot frying fat, pour a tablespoon of hot fat over the middle to prevent them from collapsing and bake until golden brown. After draining, sprinkle with powdered sugar or cinnamon sugar. In the past, the cakes were stretched over the knee to make them thin in the middle.
