Reesen Kookjes or Dree in de Pann

Ingredients for 1 servings:

  • 500 g flour
  • 20 g yeast
  • 1 pinch of salt
  • 2 eggs
  • 1 tsp sugar
  • 375 ml milk
  • e.g. lard or oil for frying

an old East Frisian recipe

Mix the yeast with a little sugar and 3 tablespoons of lukewarm milk. Then, combine the flour with the yeast, beaten eggs, lukewarm milk, and a little salt. Place the smooth dough in a floured bowl and set it in a warm place to rise. When it has doubled in size, scoop out small, flat cakes with a spoon and fry them in hot oil in a pan. If you’re having these cakes as a main course, they’re best served with a green salad or applesauce. If you have leftover stew, serve them as a dessert with sugar and syrup. We love “Dree in de Pann” dipped in sugar.
