Pumpkin – Apple – Jam

Ingredients for 1 servings:

  • 700 g pumpkin(s)
  • 200 g apple juice or water
  • 500 g apple sauce, from sour apples, unsweetened
  • 500 g gelling sugar, 2:1
  • 1 tsp cinnamon
  • 1 orange(s) or lemon, juice

The jam for the gourmet

Peel the pumpkin, remove the seeds and fibrous core, and dice the flesh. Boil with apple juice or water for 15-20 minutes until soft, then puree with a food processor. Weigh out 500g of this. Combine the pumpkin puree and apple puree in a large saucepan and heat gently. Stir in the gelling sugar, cinnamon, and orange or lemon juice. Bring to a boil, and simmer for four minutes, stirring continuously. Immediately pour into hot, rinsed jars and seal tightly. Let the jars stand upside down for five minutes.
