Pumpkin-apple-marzipan spread

Ingredients for 1 servings:

  • 500 g pumpkin flesh
  • 25 ml liqueur (vodka-lemon)
  • 25 ml water
  • 160 g marzipan
  • 4 sprigs of mint
  • 1 kg apples, peeled and pitted weighed
  • 20 g ginger, freshly grated
  • 30 ml liqueur (vodka-lemon)
  • 1 lemon(s), juice
  • 1 tsp cinnamon
  • 750 g gelling sugar 2:1

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 45 minutes

Cut the pumpkin into small pieces and simmer with 25 ml of vodka and lemon juice and water for about 10 minutes with the lid closed. In the meantime, grate the marzipan. Puree the cooked pumpkin with a hand blender. Coarsely grate the apples and add them to the chopped pumpkin in the pot. Add the lemon juice, marzipan, chopped mint leaves, cinnamon, ginger, and vodka and lemon juice and mix everything together. Stir the gelling sugar into the mixture and cook for 5 minutes, stirring continuously. Pour the mixture into jars, seal the jars, and turn upside down for about 5 minutes. This spread is perfect not only for bread but also for filling cakes or puff pastry.
