Pumpkin casserole

Ingredients for 2 servings:

  • 600 g pumpkin(s) (Hokkaido)
  • 200 g leek
  • 1 large onion(s)
  • 2 garlic cloves
  • 125 ml cream
  • 20 g butter
  • salt and pepper
  • Thyme, ground
  • 150 g cheese for sprinkling (hard cheese)
  • Sunflower seeds as needed
  • Butter for the mold

Instructions

Working time approx. 25 minutes; Total time approx. 25 minutes

Dice the pumpkin flesh. Finely chop the onion, leek, and garlic and sauté them with the pumpkin in butter in a large pot until al dente. Combine the grated hard cheese with the cream and spices. Pour the pumpkin mixture into a greased casserole dish. Then pour the hard cheese, cream, and spice mixture over the top. Sprinkle with sunflower seeds and bake in the oven at 200°C (400°F) for about 10-20 minutes. Serve with rice cakes or parsley potatoes. It’s also delicious on its own!
