Sweet chili sauce

Ingredients for 1 servings:

  • 15 chili pepper(s), red
  • ¼ kg sugar
  • ⅛ liter vinegar, tasteless
  • ⅛ liter of water
  • ½ tsp salt
  • ¼ tsp white pepper
  • 1 lemon(s), the juice
  • 2 ½ cm galangal (alternatively ginger root), chopped

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Clean and deseed the chili peppers (careful not to rub your eyes with your fingers!). Then simmer with galangal, water, sugar, and vinegar for about 25 minutes. Once cooled slightly, add pepper, salt, and lemon juice and season to taste. Transfer the sauce to a sterile jar and store in a cool place. It tastes great with roasted chicken—I personally also like it with pork fillet, shrimp, and simply as a dip for nachos. Note: You can, of course, add or omit the ingredients (e.g., ginger or lemon), depending on your taste.
